Sour lentil soup¶
A traditional Czech dish.
Easy, Vegetarian-ish
Ingredients¶
Traditionally, the soup is accompanied with bread, fried sausage and fried egg.
Steps¶
Rinse and boil the lentils according to the package instructions, with some excess water. About 3 parts water to 1 part lentils by volume.
Prepare an onion roux. Dice one large onion and fry until soft. Traditionally, pork lard is used, an acceptable alternative is to use the vegetable oil used to fry the sausage. Add two tablespoons of flour, mix and let it cook for a few minutes.
Drain the lentils reserving the cooking water. Add them to the roux, and season with a pinch of sugar, salt and pepper, and around 3 tablespoons of white vinegar. Add cooking water as necessary to achieve the correct consistency.
