Tomato noodles¶

Ingredients¶
1 Egg
Chinese pickled vegetables (鱼泉榨菜)
Steps¶
Slice the tomato, cut a bit of the white part of a green onion. Add them to a pot with some oil and fry until the tomato falls apart.
Add water and bring it to a boil. Season with a tablespoon (or two) of soy sauce, black pepper, and some dashi.
Add the noodles and press them down. Add the pickled vegetables and crack in an egg. Simmer until the egg white is set, then garnish with the green part of a green onion.

You can eat directly from the pot if you want to be faithful to the original author.
